What’s different is it’s Vegas.”

While significantly larger at 8,700 square feet, boasting an octagonal main dining room with soaring triple-height ceilings and seating for over 300, it retains the soul of the original. Turtel explains, “An exact replica would be kind of strange. We decided to keep the elements that we love like exposed brick, hardwood floors and oak tables. Then we mixed and matched those elements to create something modern and timeless. Even though the restaurant is brand new it feels like it’s been there forever.”
With roots stretching back to 1887 in Brooklyn, Peter Luger Steak House boasts over 135 years of culinary heritage. Turtel reveals the long-standing relationship with Caesars, “Caesars called my grandmother like 25 years ago. She just wasn’t interested. But they were persistent. And when I got the call five years ago we got to know each other and it was a slow process to see if it was a fit. So now that’s all culminated in this opening. Working with Caesars has been fantastic.” He also points to advancements in the beef industry, “Also 20 years ago it was difficult to even fill up one restaurant with really good USDA prime beef. The beef industry has evolved and is producing quality at high rates. USDA Prime is our heart and soul and we only purchase from the top 5% of that. So to have the supply we need has opened a lot of doors.” This ensures the consistent high-quality beef Peter Luger is known for, now available at Caesars Palace.
For lunch patrons at Peter Luger Steak House in Caesars Palace, the signature burger is a must-try, exclusively available on the midday menu. Turtel offers a pro tip: consider enjoying it without cheese to fully appreciate the flavor. “Don’t get me wrong, I love a good cheeseburger,” he admits, “But what makes our burger special is we don’t add any fat. When you add fat to a burger it looks pretty but then you throw it on the broiler and it all melts away because it doesn’t stick to the protein. Our burgers have intramuscular fat which is the marbling that naturally exists so it all stays there. So to me putting cheese on it masks that amazing flavor.”

While the original locations famously operate on a cash, checks, or Peter Luger Card basis, Vegas embraces modern payment methods. “The card was the brainchild of my great-grandfather,” Turtel shares. “You have this golden card to remind you that you want to go eat at Peter Luger and it seems to have worked. We’re up to almost 100,000 accounts. And now we have these heartwarming situations where if a long-time card holder passes away, their adult children come in and want to retain the card number but each have one for themselves. They want to keep the tradition.”
